An autumn classic.
Ingredients:

7 Green onions
3/4 Cup seasoned rice vinegar
2 Tbs chopped peeled fresh ginger
2 Cups of shredded red cabbage
½ Cup of coarsely chopped cilantro
1/2 Cup Ocean Spray® Craisins® Dried Cranberries
1 Tsp of Kosher Salt
Directions:
Cut tops off onions. Cut tops lengthwise into thin strips; cut strips into 2-inch pieces. Chop half of onion bottoms.

Place remaining bottoms in blender; add vinegar and ginger. Puree, occasionally scraping down sides of blender jar.

Strain puree into measuring cup, pressing enough solids through to yield 1/2 cup dressing; season with pepper.

Add cabbage, carrots, cilantro, and Craisins® to a large bowl

Toss in vinegar mixture and adjust seasoning with Kosher salt
