PEAR AND GORGONZOLA SALAD WITH CRANBERRY VINAIGRETTE

A classic Holiday salad dressing!

Ingredients:

  • 2 Bosc pears

    1 Tbsp fresh lemon juice

    ½ Cup of toasted whole walnuts

    6oz Arugula

    2oz Torn fresh basil. (optional)

    4 oz Gorgonzola cheese

    ½ cup Ocean Spray® Craisins® Sweetened Dried Cranberries

    VINAIGRETTE INGREDIENTS

    5 Tbsp Extra virgin olive oil

    5 Tbsp Vegetable oil

    5 Tbsp Cider vinegar

    1 Tbsp Ocean Spray® Wholeberry Cranberry Sauce

    Pinch of salt

Directions:

Wash the pears and slice thinly. Spread the slices in a bowl and sprinkle evenly with the lemon juice to prevent discoloration. Put to one side

  • Heat a saucepan over medium heat and dry toast the walnuts until light brown and just starting to release their oils. Turn frequently to prevent burning.

  • Cut the gorgonzola into small pieces and put in a large bowl with the arugula. Add the sliced pear and walnuts and toss gently until mixed.

  • For the vinaigrette, whisk together the salt, oil, vinegar and Ocean Spray® Wholeberry Cranberry Sauce in a small bowl until the vinaigrette starts to thicken, about two minutes

  • Just before serving, drizzle the vinaigrette over the salad. Toss once more and eat immediately.
