ASIAN CHICKEN SALAD

A bright salad with chopped romaine lettuce and shredded cabbage is topped with sesame Asian chicken, sliced pickled radishes, sliced green onions, chopped herbs, toasted almonds, and drizzled with Ocean Spray® Cranberry vinaigrette made with fresh herbs, sesame oil, and black sesame seeds.

Ingredients:

  • Romaine lettuce, 2-inch square pieces   2 cups

    Asian chicken, diced                             ½ cup

    Shredded cabbage                                 ½ cup

    Pickled radish, sliced                             3 tablespoons

    Green onion, sliced                               1 tablespoon

    Thai basil, chopped                               1 teaspoon

    Almonds, shaved, toasted                      1 tablespoon

    Black sesame seeds                               1 teaspoon

    Ocean Spray® Cranberry Vinaigrette      2 tablespoons  [Recipe on site]

Directions:

1.      Place the romaine and shredded cabbage in a serving bowl.

2.      Layer the remaining ingredients except the vinaigrette over the romaine and cabbage. Sprinkle with back sesame seeds for garnish. Drizzle the Ocean Spray Cranberry Vinaigrette over the salad or serve on the side in a 2-ounce ramekin. Serve immediately.
