Salads

This hearty vegetarian salad is bed of mixed herb greens studded with Ocean Spray® Dried Cranberries, roasted butternut squash, candied pecans, dollops of goat cheese and drizzled with honey thyme vinaigrette.

Ingredients:

• Herb greens                                                      2 cups

  Ocean Spray® Dried Cranberries                   3 tablespoons

  Butternut Squash, diced, roasted                      3 tablespoons

  Goat cheese, crumbled                                     2 tablespoons

  Candied pecans                                                 3 tablespoons

  Honey Thyme Vinaigrette, see attached recipe   2 tablespoons
  

Directions:

Toss all ingredients together in a mixing bowl. Place contents into serving bowl. Serve immediately
