Chopped Romaine lettuce and fresh greens are topped with all of the classic Cobb accoutrements including chopped smoky bacon, diced hardboiled eggs, diced tomatoes, shredded white cheddar cheese, sliced avocados, diced red onion, blue cheese crumbles, cranberry and thyme marinated roasted chicken and Ocean Spray® Dried Cranberries for additional texture and color all drizzled with a cranberry balsamic vinaigrette.
Ingredients:
Romaine lettuce, 2-inch square pieces 2 cups
Ocean Spray® Cranberry Balsamic Vinaigrette 2 tablespoons
Ocean Spray® Cranberry and Thyme Roasted Chicken, sliced 4 ounces
Ocean Spray® Dried Cranberries 3 tablespoons
Bacon, cooked, chopped 2 tablespoons
Blue cheese, crumbled 2 tablespoons
Red onion, diced 1 ½ tablespoons
Avocado, fresh, sliced ¼ each
Tomato, fresh, diced ¼ cup
Had boiled egg, diced 2 tablespoons
White cheddar cheese, shredded 2 tablespoons
Directions:
1. Place the romaine in a serving bowl. Place the Ocean Spray® Cranberry Balsamic Vinaigrette in a 2-ounce ramekin. Reserve.
2. Arrange the remaining ingredients in rows over the romaine. Serve immediately with vinaigrette on side.
