Cooked and chilled farro, quinoa and barley are tossed with citrus supremes, caramelized onions, fresh herbs, chopped marcona almonds and tossed in a heart healthy Ocean Spray® Cranberry vinaigrette.
Ingredients:
2 cups barley, cooked, chilled
2 cups farro, cooked, chilled
2 cups quinoa, cooked, chilled
20-25 orange segments (about 2 oranges)
¾ cup pickled red onion
½ cup Ocean Spray® Dried Cranberries
½ cup Marcona almonds, chopped
4 teaspoons parsley, fresh, chopped
1 teaspoon rosemary, fresh, chopped
1 teaspoon thyme, fresh, chopped
½ cup Ocean Spray White Cranberry Citrus Vinaigrette
Directions:
Combine all ingredients in a medium bowl. Toss with Ocean Spray® White Cranberry Citrus Vinaigrette. Serve immediately
