CRANBERRY POACHED PEAR SALAD

Tender Ocean Spray® Cranberry Juice poached pears are layered over mesclun greens accompanied by Ocean Spray Dried Cranberries, tangy Gorgonzola cheese, roasted sweet potato, and spiced pecans all finished with a sherry vinaigrette.

Ingredients:

4 cups Baby Spinach, rinsed

4 cups Whole Red Leaf Lettuce, torn and rinsed

½ cup Ocean Spray® Dried Cranberries

1 cup Candied Spiced Pecans

1 cup Sweet Potato, roasted and quartered

1 cup Gorgonzola Cheese, crumbled

1 cup Sherry Vinaigrette

1 Whole Ocean Spray® Cranberry Juice Poached Pear, quartered and thinly sliced

Directions:

In a large bowl, combine all ingredients except for the poached pear. Toss with sherry vinaigrette and distribute evenly across four plates. Top with a desired amount of thinly sliced poached pear. Season with fresh cracked pepper and serve
