RAW VEGGIE CHOPPED SALAD

This healthful and light salad features chopped romaine, spinach, kale, parsley, arugula, shredded carrots, chopped cauliflower, chopped Ocean Spray ®Dried Cranberries, chopped beets, diced celery, grape tomatoes, sunflower sprouts and diced avocado in a Cranberry “Liquid Gold” Vinaigrette.

Ingredients:

¼ cup Romaine Lettuce, chopped

¼ cup Spring Mix, chopped

¼ cup Kale, chopped

¼ cup Arugula, chopped

1 T Flat Leaf Parsley

2 T Carrot Ribbons

2 T Cauliflower, finely sliced

3 T Ocean Spray® Dried Cranberries

2 T Pickled Beets

1 T Celery, sliced thinly

2 T Cherry tomato, quartered

 2 T Sprouted Grains

¼ each Avocado, diced

 2 fl oz Ocean Spray® Cranberry “Liquid Gold” Dressing-below.

Directions:

  • In a large bowl combine all ingredients with vinaigrette and toss until combined and evenly coated.
  • Serve immediately.

Ocean Spray® Cranberry “Liquid Gold” Dressing

1 cup Champagne Vinegar

1 cup Ocean Spray® Cranberry Juice cocktail

4 T Dijon Mustard

1 tsp Kosher Salt

½ tsp Fresh Cracked Black Pepper

 ½ cup Vegetable Oil

 Method of Preparation

    1. In a large bowl combine all ingredients, except for oil and whisk until combined.
    2. Slowly drizzle in oil until emulsified
    3. Reserve until ready to use
