THAI CHICKEN SALAD

This tasty salad features Massamann curry spiced chicken breasts placed atop a crisp romaine salad with fresh shredded carrot, thinly sliced cucumber, diced tomato and Ocean Spray ®Dried Cranberries tossed in a Cranberry-Coconut Vinaigrette.

Ingredients:

½ cup Shredded Carrots

¼ cup Shredded Cucumber

4 each Cherry Tomatoes, halved

¼ cup Red Pepper, julienne

2 cups Romaine, chopped

 ½ cup Green Cabbage, shredded

2 fl. Oz Ocean Spray® Cranberry-Coconut Vinaigrette, 'recipe below'

1 each (6 oz) Thai Marinated Chicken Breast, sliced, 'recipe below'

 As Needed, for garnish Ocean Spray® Dried Cranberries

Directions:

  • In a large bowl, combine all ingredients except for chicken
  • Toss in vinaigrette until all ingredients are evenly coated
  • Place in desired serving utensil and top with sliced chicken and Dried Cranberries
  • Serve immediately

 Ocean Spray® Cranberry-Coconut Vinaigrette

Ingredients

¼ cup Ocean Spray® Cranberry Juice Cocktail

½ cup Coconut Milk

1 tsp Honey 

2 tsp Ginger

1 tsp Garlic

1 tsp Sriracha

 1 T Sesame Oil

 1 T Cilantro, chopped

1 tsp Kosher Salt

 Method of Preparation

  1. In a large bowl, combine all ingredients and whisk until emulsified
  2. Reserve until ready to use

Red Chile Marinated Chicken Breast

Ingredients

1 cup Coconut Milk

 ½ cup Red Curry Paste

1 T Roasted Sesame Oil

2 tsp Kosher Salt

4 each (6 oz) Chicken Breasts, boneless, skinless

 Method of Preparation

    1. In a large bowl, combine all ingredients except for chicken
    2. Add chicken and toss to coat
    3. Marinate overnight before using
