QUINOA AND SHAVED VEGETABLE SALAD

This wonderful salad features tender quinoa and Ocean Spray® Dried Cranberries tossed with shaved carrots, beets, zucchini and yellow squash in a zesty 'Herbed' Cranberry Vinaigrette.

Ingredients:

5 Qt Tri-Color Quinoa Blend, cooked

5 cups Carrot, shaved

5 cups Zucchini, shaved

5 cups Yellow Squash, shaved

5 cups Beets, roasted, thinly sliced

3 ¾ cups Ocean Spray® Dried Cranberries

3 ¾ cups Ocean Spray® Italian Cranberry Vinaigrette, on website, search sauce

TT Kosher Salt

TT Fresh Ground Black Pepper

 

Directions:

  • In a large bowl combine all ingredients with vinaigrette and toss until combined and evenly coated.
  • Season with salt and pepper to taste.
  • Serve immediately.
