This sweet and savory sandwich features slow smoked and pulled chicken tossed in a delicious Smoky Cranberry BBQ Sauce and topped with a crunchy Carolina style coleslaw and fresh bread and butter pickles on butter toasted brioche.
Ingredients:
20 each Brioche Buns
As Needed Unsalted Butter
2 ½ Qt Ocean Spray® Cranberry BBQ
5 # Smoked and Pulled Chicken
60 each Bread and Butter Pickles
5 Qt Dressed Cabbage Slaw Mix
Sandwich Build
1 each Brioche Bun, halved
As Needed Unsalted Butter, melted
½ cup Ocean Spray® Cranberry BBQ, 'recipe below'
8oz Smoked and Pulled Chicken
3 each Bread and Butter Pickles
1 cup Dressed Cabbage Slaw Mix, 'recipe below'
TT Salt and Pepper
Directions:
- Preheat griddle to 350F
- Brush each side of the brioche and toast on griddle until golden
- Toss chicken in BBQ sauce and then place on bun
- Top with the pickles, dressed cabbage slaw mix and the bun top
- Serve immediately with your favorite side
Bulk Coleslaw Dressing
3 cup Mayonnaise
½ cup Yellow Mustard
½ cup Honey
¾ cup Pickle Relish
15 cups Shredded Cabbage
3 cup Shredded Carrot
6 cups Tart Apple, Julienne
Method of Preparation
- In a small bowl mix all ingredients, except for cabbage, carrot and apple, until combined, and reserve until ready to use
- When ready to use, mix cabbage with coleslaw dressing and use immediately
