SMOKY TEMPEH - AVOCADO WRAP

This flavorful vegetarian wrap features smoky tempeh tossed with a Crunchy Cranberry-Citrus Slaw, along with spring greens and fresh avocado inside a jalapeno flour tortilla wrap.

Ingredients:

 20 each 12” Jalapeno Flour Wrap

10 cups Ocean Spray® Cranberry-Citrus Slaw, recipe follows

10 cups Smoked Tempeh

5 cups Chopped Romaine

10 each Avocado, sliced

1 each 12” Jalapeno Flour Wrap

½ cup Ocean Spray® Cranberry-Citrus Slaw, recipe follows

½ cup Smoked Tempeh

¼ cup Chopped Romaine

½ each Avocado, sliced

Directions:

  • In the center of the tortilla place smoked tempeh, cranberry-citrus slaw, chopped romaine and avocado.
  • Fold in the corners and roll tightly
  • Optional: Preheat griddle or sandwich press to 350F
  • Optional: Place flap side down on the griddle and grill until browned on each side
  • Serve immediately

 Bulk Ocean Spray Cranberry-Citrus Slaw

1 cup Ocean Spray® Cranberry Jelly sauce

1 cup Mayonnaise

2 T Lemon Juice

1 tsp Kosher Salt

½ tsp Fresh Ground Black Pepper

8 cups Shredded Cabbage

1 cup Shredded Carrot

 Method of Preparation

    1. In a small bowl mix all ingredients, except cabbage and carrots, until combined.
    2. When ready to serve, toss with cabbage and carrots until coated
    3. Use immediately
